Taco Casserole


Made this Sunday night for din din. 

1 lb lean ground beef (80/20 or higher)
1 can refried beans (16 oz) 
1 jar salsa --your choice (16 oz) 
1 package low sodium taco seasoning 
Diced green bell pepper 
Diced tomato 
Sliced black olives 

Shredded lettuce 
Chopped green onions 
More cheese

Cook the beef and drain any grease. Add in taco seasoning, beans and salsa. Pour mixture into a 2 quart casserole dish and top with bell peppers, tomatoes, olives and then cheese. Bake for 25-30 minutes at 350* until cheese is melted and bubbly. (Meat is cooked so you're just wanted to heat the toppings)

You're done! 

I mixed mine with some shredded lettuce and ate it like a taco salad. You oculus also bake it with crumbled tortilla chips as the bottom layer. 

1/6 of this recipe is around 300-350 calories depending on the type of ingredients you buy.
